Muesli Cookies

I needed to make something else for the kids lunch boxes so I thought I might make some cookies. While I was at the supermarket walking down the cereal aisle I decided on making a cookie with muesli in it. Coles Natural Summer Fruits Muesli had a recipe on the back of its packet so I gave it a go. They were easy to make and turned out really good.


Muesli Cookies

Ingredients:
150g butter, softened
¾ cup raw sugar
1 teaspoon vanilla extract
1 large egg
1¾ cups plain flour, sifted
½ teaspoon baking powder
1 cup Coles Summer Fruits Muesli
Raw sugar for sprinkling on top
Cinnamon for dusting (optional)

Prepare:
1. Preheat oven to 180°C conventional/160°C fan forced. Beat butter and sugar in a large bowl until fluffy. Beat in egg. Fold in flour, baking powder and muesli.

2. Roll generous tablespoons of mixture into balls. Place onto lined baking tray allowing space for spreading. Flatten slightly. Sprinkle with raw sugar. Bake for 15 minutes or until golden. Stand on tray for 2 minutes. Remove to a rack and cool.


I didn't use cinnamon for mine, the raw sugar was enough for me. Sometimes the kids don't like cinnamon unless it is mixed into the ingredients.

Dinner on thursday night

I made a lovely Bacon and Beef pasta bake on thursday night. I found the recipe on Best Recipes. I changed  it to work for me as we have a large family so I increased a few of the ingredients. It still turned out great and it was yummy. I always know if something turns out good if the kids eat it and there are no complaints. This recipe is how I made it using my changes.

Bacon and Beef pasta bake

2 tablespoons of oil
1 onion, finely chopped
2 teaspoons of minced garlic
8 bacon rashers, chopped
1.5 kg beef mince
1 x 680g Passata Sauce
1 x 810g finely chopped tomatoes
2 teaspoons beef stock
1 x 500g packet of frozen mixed vegetables
500g cooked pasta
300g grated tasty cheese
Salt and pepper to taste

Method

1. Preheat oven at 180°C.
2. Grease ovenproof dish.
3. Add mince, stirring occasionally until cooked and changes colour.
4. Add passata sauce, stock, vegetables, salt and pepper. Bring to the boil then simmer for 5 minutes.
5. Add cooked pasta. Stir to combine and pour into ovenproof dish.
6. Sprinkle the grated tasty cheese over the top.
7. Bake for 30-40 minutes until cheese has browned on top.

Chilly morning

Wow it was cold this morning. The kids enjoyed pretending they were a train with fog coming from their mouths. Coats were definitely needed going to school today.


I made some strawberry chocolate cupcakes and vanilla pudding chocolate chip cookies yesterday. The cupcake recipe I had in my recipe collection printed on paper from a few years ago. The cookie recipe is from twopeasandtheirpod

The smell of baked goods

Did some cooking yesterday. I love it when the house has some wonderful baking smells coming from the kitchen. Its also nice as the oven warms the kitchen up when its cold. Here are some of my goodies,

Our nice floured loaf was enjoyed with beef ravioli and homemade tomato pasta sauce. The kids enjoyed it and it was easy to prepare. I will try and post the recipe for the sauce by next week. Of course I forgot to take some photos of our yummy meal. I am new to the blogging fun so I need to remind myself to take pictures.

Where do the days go?



I cant believe that it is nearly the end of May. Where do the days go? Before I had children the days went so slow. There was no rushing to be anywhere and you had all the time in the world. We had our first baby and it still felt the same. Plenty of time during the week. Second baby came along and days started to go by abit quicker. Once they started kindergarten and you had a set time for two days of the week, the weekend was not that far away. Then after a few years, along came our third, fourth and fifth baby. Of course there was a couple of years in between each bub. Attending kindergarten for each child came around so fast and before we knew it they were growing up and starting school. I look back at their baby photos and sometimes think how did the time go so fast. I have enjoyed seeing them grow from babies, then into toddlers and now into school children. I just hope that there will be some weeks where it will take awhile to get to the next weekend!

What do you think? Are the days and weeks just flying by? Is there a way we could slow it down abit, maybe??
